garlic cream cheese mashed potatoes.
i had these at revolution brewing for the first time and had to find/create a recipe for them. SO delicious.

garlic cream cheese mashed potatoes

prep time: 35-40 min | actual time: 1 hr |serves: 5-6
what you need:
- 5-6 lg yellow potatoes (these are a bit buttery and creamy themselves, but any potato is fine)
- 3-4 cloves garlic, crushed
- 8 oz (1 pkg) Philly cream cheese
- 1/2 stick unsalted butter
- 1 cup milk
- 3 tablespoons Parmesan cheese
- salt and pepper
get it done:
- boil potatoes in salt and water in a pot
- once it boils, cover partially and simmer until potatoes are tender (ab 30-40 minutes depending on size)
- drain and when they are cool enough to handle, peel skins and cut potatoes into large pieces
- my wonderful roommate has a mixer so i used this – but you can also use a masher if you have one too!
- combine potatoes, cream cheese, butter, garlic, and milk and mix
- season with salt and pepper to taste
- return back to pot and place over medium heat, adding more milk if needed – stirring constantly until heated
